This morning, begin your exploration of Kangaroo Island. Visit the Island Beehive to see working honey producers tending one of the world’s only remaining colonies of pure Ligurian honeybees. The Ligurian honeybee subspecies (Apis mellifera ligustica) was native to northern Italy, but progressive hybridisation with the German honeybee (Apis mellifera mellifera) has diluted their stock in Europe. Fortunately, in 1884 a colony of Ligurians was established on Kangaroo Island.
Continue to Kangaroo Island Spirits, an artisanal gin distillery and Australia’s oldest establishment dedicated to the craft. In addition to a range of gins, the distillery also produces delectable liqueurs from Kangaroo Island-grown herbs and fruits.
Travel to Bay of Shoals to tour a coastal vineyard and experience a unique wine tasting followed by lunch with stunning sea views.
Return to the hotel in the late afternoon for some time at leisure.
Tonight, enjoy dinner at a local restaurant.

In the morning, travel to the south coast of the island for a visit to Seal Bay Conservation Park. One of the iconic images of Kangaroo Island is its colony of Australian sea lions (Neophoca cinerea) basking on the beaches, casually indifferent to human observers. This endangered species was nearly hunted to extinction in the 19th century, and the Kangaroo Island colony still represents a significant portion of their entire population.
Enjoy a special farewell lunch with Brigid and fellow travellers at Sunset Food & Wine, a restaurant overlooking American Beach and Eastern Cove. The first Kangaroo Island restaurant to be awarded a Good Food Guide chef’s hat, Sunset Food & Wine benefits from the passion of Michelin-trained chef Jack Ingram.
